I’ve found a problem. It’s a misunderstanding of what a brownie is or should be.
Blue Star is a little homestay/hotel at the east end of Jemeluk Bay, and is fairly cozy. Worth to sit around between snorkelling and swimming in the bay.
So, what was the problem? It wasn’t the use of a premix-brownie-mix; some can be pretty amazingly good.
Normally brownies are poured into their tray fairly shallowly, between 1.5cm and 4cm thick. Too thick, and they either take so long to cook they cook too much (and become cake), or they don’t get cooked enough and are just goo inside. Even proper thickness brownies walk a fine line between under and over cooked, (and over-cooked is almost always the culprit to bad brownies).
In this case, Blue Star cooked it like a cake, or like a loaf of bread. As in, it was about 15cm tall and 1cm wide (and sliced sideways, like a slice of bread).
So… while it had potential, (the tiny top was good!), overall, it wasn’t.
I should mention – the ice cream had seen better days. Refrozen several times left it icey with syrupy bits. A shame.
